Much Ado About Stuffing

Fudgy Olive Oil Brownies for Passover or Any Time


  • 4 oz semi-sweet chocolate, melted
  • 1/3 cup Olive Oil,
  • 1/2 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1/2 cup matzo cake meal
  • 2 tsp vanilla
  • 1 tsp salt
  • 1 1/4 cups chocolate chips, milk or semi sweet
  • *optional 1-2 Tbsp coarse sea salt for sprinkling


  1. Preheat oven to 350
  2. Line an 8×8 pan with foil and spray lightly with baking spray
  3. In a large bowl, combine your melted chocolate and olive oil.
  4. Whisk in eggs, sugars and vanilla until combined.
  5. Add in cake meal and salt and stir until incorporated.
  6. Fold in chocolate chips.
  7. Spread in prepared pan and sprinkle with coarse sea salt, if desired.
  8. Bake approx 25 minutes until a toothpick inserted 1″ away from the edge comes out clean, and the center is still slightly soft.
  9. Let cool completely before cutting into squares.
